Heavenly Broccoli Salad

by Carole-Lee Schuchmann

Y’ALL. I won’t lie. This is the best best broccoli salad I’ve EVER had. It’s creamy, nutty, sweet, and tart; and it also happens to be so good it tastes like it must be at least a little bit bad for you. But hey, don’t worry- It’s super good for you, and is comprised of only a few simple ingredients. It also takes no time at all to prepare! Make this as a side dish, or a main course (like I did!)

INGREDIENTS

For the dressing:

1¾ cup raw, unsalted cashews
½ cup water
4 Tbsp grade B pure Maple Syrup
4 Tbsp apple cider vinegar
2 Tbsp Safflower oil
1 tsp sea salt
freshly ground black pepper
1 large clove garlic, minced

For the salad:

3 large heads broccoli, cut into florets
1½ cups red grapes, halved (feel free to add more if you like!)
½ cup pine nuts
½ cup raw, green pumpkin seeds
⅓ cup slivered almonds
¾ cup finely diced red onion
½ cup dried cranberries

INSTRUCTIONS

In a large bowl, add broccoli, red onion, pine nuts, pumpkin seeds, almonds, dried cranberries and red grapes, and stir together until nicely incorporated. Next, in a high speed blender, add all cashew cream ingredients and blend on high for 30-45 seconds. Pour over salad, and stir with a big wooden spoon until everything is coated. Serve chilled, and enjoy!

'Behold, I will bring them from the north country, And gather them from the ends of the earth,
Among  them the blind and the lame, The woman with child and The one who labors with child,  together,
A great throng shall return there...And My people shall be satisfied with My goodness, says the LORD.'
 Jeremiah 31:8, 14
