Heavenly Broccoli Salad

Y’ALL. I won’t lie. This is the best best broccoli salad I’ve
EVER had. It’s creamy, nutty, sweet, and tart; and it also
happens to be so good it tastes like it must be at least a
little bit bad for you. But hey, don’t worry- It’s super good
for you, and is comprised of only a few simple ingredients. It
also takes no time at all to prepare! Make this as a side dish,
or a main course (like I did!)
INGREDIENTS
For the dressing:
1¾ cup raw, unsalted cashews
½ cup water
4 Tbsp grade B pure Maple Syrup
4 Tbsp apple cider vinegar
2 Tbsp Safflower oil
1 tsp sea salt
freshly ground black pepper
1 large clove garlic, minced
For the salad:
3 large heads broccoli, cut into florets
1½ cups red grapes, halved (feel free to add more if you like!)
½ cup pine nuts
½ cup raw, green pumpkin seeds
⅓ cup slivered almonds
¾ cup finely diced red onion
½ cup dried cranberries
INSTRUCTIONS
In a large bowl, add broccoli, red onion, pine nuts, pumpkin
seeds, almonds, dried cranberries and red grapes, and stir
together until nicely incorporated. Next, in a high speed
blender, add all cashew cream ingredients and blend on high for
30-45 seconds. Pour over salad, and stir with a big wooden spoon
until everything is coated. Serve chilled, and enjoy!
