Hello Everyone!

My name is Vicki Sink and I have just recently started my Charis Childbirth Educator and Doula Training, which I am thoroughly enjoying!

I have come to realize that God has worked miracles in this area of my life! When I was first married and thinking about having children I thought labor and delivery was a scary thing. I shared this thought with a group of ladies and it just so happened one of these ladies took special interest in my comment and wrote me a note later. She had lots of reading material on natural childbirth, which was so amazing to me! All I ever knew was going to the hospital and doing everything the doctor said. After reading this material I was ready to trust in God and have my babies naturally at home. I have now had two perfect labors and deliveries at home and have two precious children!

After experiencing such wonderful births I wanted everyone to have this opportunity! At this time I had no clear direction as how to share this opportunity with others. One day as I was reading “Baby Catcher” it just hit me that I wanted to be a Doula. I shared this with one of my friends who was one month away from her due date. She just happened to be having a Doula at her birth and wondered if I would want to come. Of course I wanted to come! She ended up having a beautiful birth! What a Miracle! I was hooked! As I was searching for a way to become certified, my friend Kristen Paulus introduced me to Charis. Thank you Kristen! Well, that’s pretty much my story as I remember it.

I have a wonderful family! A husband who is very supportive, two children, Drew who is two and Megan who is one, and we are looking forward to the birth of our new little one in November!

Charis Cuisine

A Healthy Palette of Delight
 

Servings: 4

This colorful vegetable dish is the most interesting, beautiful and tasty food!  Even omnivorous guests will try  it and will be colorfully and tastefully surprised at how yummy it is and will want to know the ingredients.

Ingredients:
1 smaller cabbage, diced up
½ white onion
2 carrots, diced up
1 bigger beetroot, diced up
1 sour apple, diced up
1/2 lemon's juice
1-1 spoon of olive oil
some parsley
a small salad for decoration

Preparation:
Put the vegetables into the chopping machine one by one, and chop them up until they're crumpled.

Cabbage salad: cabbage, white onion, a couple of drops of lemon juice, one spoon of olive oil

Carrot salad: carrot, lemon juice, olive oil

Beetroot salad: beetroot, apple, olive oil

Put salad leaves into a bigger bowl and form small piles of the different colored vegetables with the help of a cup. You can put the "heart" of the salad, or any other colorful vegetable (broccoli, tomato, radish, etc) in the middle.

Nutritive Values of Cabbage

Cabbage contains phytonutrients, and works to protect the body from free radicals that can damage the cell membranes. Phytonutrients also signal our genes to increase its production of enzymes involved in detoxification.

Cabbage may lower the incidence of cancer, especially in the lung, stomach and colon prostate.

The juice of fresh raw cabbage has been proven to heal stomach ulcers.

Cabbage is rich in iron.

The juice of fresh cabbage is effective in treating fungus infection (due to it sulfur content).

Cabbage can lower serum cholesterol.

Cabbage contains Sulforaphane, a substance that can increase the production of antioxidant and detoxification enzymes. Sulforaphane works by stimulating the production of glutathione, the body's most important internally produced antioxidant which plays a role in liver detoxification.

Red Cabbage has more phytonutrients than the green cabbage. The vitamin C content of red cabbage is 6-8 times higher than that of the green cabbage.

Nutritive Values of Cabbage : Per 100 gm:
Vitamin A - 80 I.U.
Vitamin c - 50 mg.
Calcium - 46 mg.
Phosphorus - 31 mg.
Potassium - 140 mg.
Carbohydrates - 5.3 gm.
Protein - 1.4 gm.
