Greetings to a wonderful new circle of comrades!

The writer and speaker John Piper said something to the extent of: "Grace is the river of God's unmerited favor flowing to us and over us moment by moment and collecting in a reservoir of His faithfulness behind us." As I turn around and reflect on my life, I am overwhelmed by the Lord's kindness and undeniable faithfulness to me and my family. When my husband, Derek, and I met neither one of us were walking closely with the Lord and yet I know, looking back, beyond a shadow of a doubt that we were meant to be together. We were married in 1993 after dating for a year. We've had challenges in our relationship but because of God's kind mercy and patience with us, I can say with great joy that this past year has been the absolute best of our whole marriage! God has done a tremendous and miraculous work in each of us and the fruit is so sweet!

After a couple years of marriage, God began to bless us with little ones. First, Beth and then a couple years later, Caleb and so as not to break the pattern of "every two years", Miriam came along next. And of course, two years after, Benjamin arrived. The Lord in His kindness gave me a bit of a breather before Lydia arrived in July of 2005.  All in all, it's become quite a full house! However, we've just discovered that it's going to become a little bit fuller come May of next year.

Our family has been such a wonderful blessing and in all of the details of our life, I see God's mighty and loving fingerprint. I have considered myself truly graced to be able to stay at home with my children. God's good faithfulness has always provided enough through Derek's employment to cover the expenses so that my working outside the home has never been necessary. We have also been so privileged to live in a state where it is fairly easy to home school and we are extremely thankful for that!

As we walk through this life together as the Thompson family, we see day by day the tender mercies of God's faithfulness towards us and it causes us to praise Him!

Now as I begin the journey down the Charis Midwifery Education  road, I know the Lord's leading and trust His faithfulness to guide me but I also have been assured of the support of my family, which blesses me incredibly! Thank you Derek and all my children! Thank you my Wonderful Heavenly Father!

Spicy Butternut Squash
 with Peanuts and Coconut milk

This is a very spicy dish!  If your taste buds are not this spicy, omit the serrano peppers and alter the garnishes to your pleasing.  As a variation to this recipe try making it with peeled garnet yams. I think you'll find it to be equally delicious. Use a sauté pan with a tight fitting lid to cook squash, this will reduce the cooking time and ensure that the squash cooks evenly.  Serve over brown rice.

Serves: 4

Ingredients:
1 small yellow onion, diced
3 garlic cloves, minced
1 or 2 serrano pepper, thinly sliced
1/4 teaspoon dry mustard
1 2-1/2 lb butternut Squash
3/4 cup of water
1 teaspoon salt
2 teaspoons yellow curry powder
1-15 ounce can of coconut milk
2 tablespoon olive oil

Peel, seed and cut squash into 1-1/2 inch cubes. Dice onion, mince garlic and slice pepper.

Heat oil over high heat; add onions, garlic and pepper then stir. When the onions become transparent add the squash, salt, and water. Cover; lower heat to medium and let simmer until the squash is tender when pierced, about 15 minutes. Adjust the heat to low; add coconut milk and cook for 5 minutes.

Additional Ingredients:
1/4 cup chopped dry roasted peanuts
3 tablespoons toasted coconut
25 stems of cilantro, chopped
2 green onions, sliced on the bias
1/4 cup fresh lime juice

Taste and adjust seasoning. Just before serving sprinkle with chopped peanuts, coconut, cilantro and green onions then stir in lime juice.

In our August 2007 newsletter, Heather Jones shared three year old  Suzanne's letter to her Daddy, Jason, who was deployed on his ship:

Daddy, Do not fall off your ship. You can be on your ship, and have some pizza, and go potty, and look at your computer, daddy. I love you daddy. I miss you daddy. I want to give you a big hug.

Suzanne, I am not going to fall off my ship baby, I will be on here and I will have some pizza sometimes and I will go potty every time I feel like I have to. I miss you something else, I love you and can't wait to give you a hug.
