Raw Pad Thai with Spicy Almond Sauce

This Raw Pad Thai is what dreams are made of. It's got such an
amazing depth, crunch, and flavor; it's easy to forget how good
it is for you. Nourishing and rich with Beta-Carotene, Fiber,
Vitamins A, B, C, D, E & K; Potassium, Magnesium, Zinc and
healthy fat, this meal leaves you feeling full and satisfied.
Raw Pad Thai Ingredients
• 1 cup broccoli, chopped
into small florets
• 3 zucchini, peeled and spiralized
• 2 large carrots, peeled and shredded
• 1/4 cup fresh cilantro, chopped
• 1 cup red cabbage, sliced or shredded
• 1 cup bean sprouts
• 1/2 cup scallions, chopped
• 1 cup snow peas
Spicy
Almond Sauce Ingredients
• 1/4 cup raw organic almond butter
• 1" thumb fresh peeled ginger
• 1 Tbs soy Sauce
• 1/4 cup lime juice (about 2 large limes
• 1/4 cup water
• 1 Clove garlic
• 1 tsp sriracha
• 1/4 tsp salt (or to taste)
• Pinch or drizzle of your sweetener of choice (optional)
Directions
Prepare all vegetables and
set aside in a large bowl. Next, in a high speed blender, add
all ingredients and blend on high until completely smooth (Taste
and add more sriracha and salt if you prefer.)
Once the spicy almond sauce is blended, pour over your raw pad
thai veggie mixture, and stir or toss until completely coated.
Garnish with fresh cilantro, scallions and slivered almonds, and
enjoy! |
