Watermelon Cake

A fun summertime recipe that both kids and adults enjoy...
Jaime's precious hungry babies, Eli and Grace
They LOVE watermelon cake!
1. Buy a beautifully ripe water melon and cut off rinds so that
the inside of melon is in the shape of a square.
2. Smother in coconut cream (canned coconut milk - use the thick
cream portion - you can thicken coconut with tapioca flour and
sweeten with honey/sweetener of choice and vanilla. Whip by hand
or blender.
3. Once coconut topping is on you can add fruits and nuts (we
like bananas, kiwi, almond slices) anything you like, really.
4. ENJOY!
