Super Immune System Booster Soup

If you find that a cold has snuck up on you this winter, I’ve got an amazing [top Secret] family cold remedy I’d like to share with you!

Of all the tried-and-true home remedies, this one is a new all-time favorite for my family! Whenever my husband and I start feeling under the weather, we make ourselves a batch, and the relief begins almost immediately. It’s aromatic, delicious, and super-charged with immune supporting roots and vegetables.  It can be made with your choice of noodles or rice, made mild or spicy, left chunky, or strained; and can be tweaked and adjusted pretty much however you like. (We like to put a big spoon full of sriracha and extra soy sauce in ours!)

 

Ingredients

1" thumb of ginger, minced.

3 large cloves of garlic, minced

1/2 sweet white onion

1 large Carrot

1 Bay Leaf

1 TBS extra virgin olive oil

1 jalapeño, minced

1 stalk celery, finely diced

3 TBS soy sauce (add more if desired)

4 cups filtered water

3 oz. noodles or grain of choice (Prepare long cooking grains separately, then add once the base is done simmering)

chopped green onions

cracked black pepper

sea salt, to taste

dash of sriracha (optional)

Directions

Dice up veggies and set aside in a bowl. Get your pot to medium heat, then add olive oil and bay leaf. After about one minute, add all vegetables (except for your diced green onions) and simmer for 5 minutes, stirring occasionally. After all veggies have become fragrant, add water, bring to a boil, reduce to medium-low, cover and let simmer for 45-50 minutes. The longer you let it simmer, the more flavorful it becomes!

After the time is up, you can either strain your vegetables out, or keep them in! Both ways taste delicious!

Add noodles, soy sauce, salt, pepper, and chopped green onions, and enjoy!

Bonus: If you are congested or have the sniffles, breathing in all the aromas wafting from your bowl is an instant pick-me-up!
