Our Charis Family

David and Susan are not new to Charis, but their lives are headed in a new direction!

Greetings Charis Friends!

I've been blessed to serve Charis for four years as Director of Midwifery Studies and have helped Kristin Schuchmann to revise and improve the Charis course for childbirth professionals to include an advanced academics course for midwives that launched in 2007. David has been our behind-the-scenes web master and computer engineer. A few weeks ago our cozy life in the Orlando area of Florida took a new direction. The job David had for the past 20 years was no longer a viable option and we had to make some decisions. After looking at the future and praying for God to reveal what our next step would be, we found ourselves in Roanoke, Virginia, looking for a new home.

It might sound like a big unknown move, but not really. Both of us spent our childhood in Virginia Beach, and I lived in Floyd County, Virginia, for 30 years, serving the beautiful, rural, diverse mountain community (and 200 miles surrounding Floyd, including Roanoke) as a traditional midwife before marrying David and joining him in Florida seven years ago. So, the move will be a homecoming for me. Having lived in Florida for 30 years, David will be busy making it his new home as he launches a computer business, blessing the area with his skills as a web designer, programmer, software engineer and graphics designer. (He'll also be re-acclimating to winter!)

Along with coaching the awesome Charis students, I look forward to holding Charis workshops in Roanoke, elsewhere in Virginia and traveling back to Florida regularly to work with Kristin as she becomes a licensed midwife. I love the lack of geographical boundaries that Charis embraces!

How can I thank many of you who have helped us in this transition, both prayerfully and physically? From our hearts we want to hug each of you and show our gratitude that is larger than the world! Our home is open, and we welcome anyone who would like to visit the Blue Ridge Mountains.

Charis Cuisine

Pumpkin Chocolate Cheesecake

I found this recipe years ago and altered it, taking out some of the more unnatural ingredients, and replaced healthy alternatives.  ENJOY!  ~Susan Oshel

Ingredients:
(Most ingredients can be found in health food stores.)

Crust 1

1/2 cup raw almonds
1/2 cup raw pecans
8 whole dates, pitted, Medjool
1 tsp vanilla powder
1/4 tsp Himalayan pink salt (or sea salt)
1/2 tsp cinnamon

Crust 2 - Chocolate Layer

3/4 cup agave nectar, dark (or honey)
1/3 cup coconut oil, liquid
3/4 cup cocoa powder

Filling

1 cup almond milk
1 cup agave nectar, dark (or honey)
2 Tbsp lemon juice
3 cups cashews, soaked 4 hours, drained and rinsed
3 cups butternut squash, shredded
1 Tbsp Lucuma powder (sweet fruit of the Lucuma tree)
2 Tbsp vanilla powder
1/8 tsp Himalayan pink salt (or sea salt)
1/8 tsp tumeric
2 tsp pumpkin pie spice
3 Tbsp lecithin (Non-raw ingredient. Use Non-GMO, non-dairy lecithin, or better yet try using raw Irish moss)
1 coconut oil, liquid

Directions:

Crust #1


Place almonds, pecans, salt and cinnamon in food processor with blade and begin processing. Add dates (one at a time) and process until mixture sticks together. Thoroughly combine ingredients.

Press this nut crust into a 9 x 9 (or 8 x 8) springform pan.

Crust #2

Place all ingredients as listed into a blender and blend until smooth.  Pour ½ of chocolate on top of nut crust and allow to harden in fridge.  Set aside the remaining mixture for filling - do not refrigerate this remaining mixture at this point.

Filling

Add lecithin and coconut oil to filling mixture and blend all ingredients until well combined.

Pour pie filling on top of pie crust in springform pan.  Add the rest of the chocolate (or keep just a bit for decorating the plates) by spooning randomly over the pie.  Take a chopstick and swirl them together to create a marbled appearance.

Place pie in the fridge until firm.  Remove springform casing and serve.

Leftovers can be stored in the freezer for several months.  Remove and defrost before serving.
