David Oshel

David
and Susan Oshel
This
month we are introducing a very quiet, but very important member of
the Charis Family. He likes to remain behind the scenes, always
encouraging, faithfully working, never looking for applause; so when
we asked him to introduce himself through the newsletter, he wasn’t
super excited about it. We finally talked him into allowing US to
introduce him to you.
David Oshel is our brilliant webmaster. By now, you have most likely
checked out the new Charis website and seen the fantastic work he
has done and is continuing to do.
If his last name didn’t already give it away, David is married to
Susan Oshel, our Director of Midwifery Studies. David and Susan
currently live in Winter Park, Florida, and have 5 children and 7
grandchildren. It is always a highlight for David when his
grandchildren come for a visit… and his grandchildren absolutely
adore him!
By day, David works as general manager of Suncoast Technologies, an
aerospace manufacturer. But his real passion is computers. He and
his brother Rodney started
“Cosmic Geeks”,
a growing internet solutions, business & technology service.
David brings more than just his computer and web design expertise to
the Charis family. His background in biology and other sciences has
made him a great sounding board as we are constantly seeking to make
the Charis course the best education available for birth
professionals. David cheerfully tolerates the many detailed “birth”
conversations Susan and Kristin have at HIS dinner table and,
although he is a man of few words, he even offers his own two cents
worth at times.
If you haven’t already done so, take a few minutes to peruse the new
Charis
website that David has designed. It is fabulous!

Kids Korner
Crou-Tongs
One evening as my kids and I were all
setting the table for dinner, I asked Caleb (my 10 year old) to get
the tongs for the salad. Benjamin immediately started cheering,
"Yeah, yeah!! We get to have tongs! I want tongs, too!" Puzzled at
his excitement about having tongs for the salad, I questioned him
about what he was thinking of. He explained that "tongs" are the
small, brown, crunchy things that go on top of salads. Since then,
they have become known as "crou-tongs" in our family.

Benjamin Abraham Thompson
He wrote his whole name with blue
iridescent stones. His family uses these stones in home
schooling for counting and some math games...or writing. Way
to go Benjamin!

Charis Cuisine
Thai Salad with
Nutty Sauce
Ingredients
Dressing
(makes 2 cups of
dressing)
4 tablespoons Fresh lemon juice
2 tablespoons Fresh ginger, peeled and chopped
¼ cup raw agave nectar (or honey or maple syrup)
3 tablespoons Nama Shoyu (or tamari or soy sauce)
1 tablespoon Sesame oil, cold pressed
3 cloves of garlic
1 serrano or jalapeno chile pepper (serrano is hotter than jalapeno)
1 cup raw almond butter
½ cup pure water (or more) to thin the dressing
Salad
Somewhat equal parts of
the following:
Carrots, diced very small
Red Cabbage, thinly sliced
Daikon Radish, grated, sliced like matchsticks, or shaved
Bok Choy, diced
Green Onions, thinly sliced
Red Bell Pepper, diced
Cucumber, diced
Chopped Raw Cashews, optional topping
Preparation
Dressing:
In food processor or blender, blend all ingredients until the
garlic, ginger, and chile are pureed. (I have also made it by
mincing the garlic, ginger and chile and mixing by hand. So this
meal could be appliance free.)
This is currently our favorite meal! It is pretty basic and can be
altered to fit your own taste.
The dressing is also great as a dip for veggies. Always a big hit!
