Hi!  I’m Lauren Tardy, one of the newest members of the Charis family.  I’m excited to be on this journey and am looking forward to the ways that God will use these skills to bless other women and families.

I grew up in Texas (yes I’m a proud Texan) with my parents and two younger siblings.   I have one brother who is about to graduate from college and a sister who is about to graduate from high school.   I went to college at the University of Texas and got a degree in nursing.   After my sophomore year of college I got married to my wonderful husband.   He worked while I finished school and soon after I graduated we made the long move up to Pennsylvania.   We believe the Lord is leading us to move to South Asia so we moved up to Pennsylvania for a training/mentorship program that helps to prepare you for cross cultural work.  We plan to be in Pennsylvania until this summer and move to South Asia sometime this fall.

I have been interested in working with mommas and babies since nursing school and that desire has only grown in the past couple years.   When we moved up here, the Lord provided a job with a midwife in the area working as a nurse.   I was able to do postpartum visits with the Amish community.   I wanted to get further training and experience so I applied for the doula program with Charis.   I just started in March and am excited to be a part of the program.

My husband and I are looking forward to being parents one day but we are not quite sure when that will happen.   Until then I am excited to work with others who are already there and definitely enjoy holding their babies!

Charis Cuisine

Cucumber Club


serves 1

1 cucumber
1 small onion
1 avocado
salt

This made a great lunch that was both light and filling.  Enjoy! ~ Susan Oshel

Peel the cucumber and cut in half.   Using a spoon or scoop, scrape out the seed cavity and some of the flesh so that it's a hollowed boat.   Keep what has been scraped out and chop finely.   To that, add one chopped avocado and one finely minced onion.   Mix together and use this to fill the cucumber.

Many folks ask about adequate protein, and especially the need for complete protein if one chooses to eat vegan.  We'll be featuring more nutritious snacks and meals that provide the nourishing benefits of carbohydrates and protein in our delicious gardens of fruit, vegetables, nuts and seeds over the months to come.
