Charis Cuisine
Puttanesca Pasta
2 small servings or 1
hungry one
Another yummy healthy
anti-pasta dish. It's still winter weather in a big part of the
world, and dishes like this are warming to our hearts and bodies.
Next month we'll be ebbing into warmer weather cuisines. ~editor~
Ingredients
1 zucchini, julienned or spiralized
1 medium tomato, chopped
6 kalamata olives, chopped
3 large green olives, chopped
3 sundried tomatoes, chopped
1 slice of red onion, chopped
1 garlic clove, chopped
1 handful of parsley, chopped
1 tablespoon olive oil
1 small hand full of sprouts, to garnish
1 tablespoon pine nuts, finely chopped
Preparation
Julienne the zucchini and add a pinch of sea salt just to soften.
Let sit while preparing the sauce. Mix the next 7 ingredients (
tomato to olive oil ) in a bowl. Drain the zucchini ( sometimes you
will have some water to drain off from adding the salt) and top
with the sauce. Then garnish with
sprouts and pine nuts. Enjoy

Kids Korner
A Barrette Like Yours, Please

Brady came over with a
cool new summer buzz haircut. Turning three years old
opens new quizzical questions on a regular basis. One such
question arose this day.
"Grandma", I want a
barrette like yours," he said as he watched me
put my hair up in a barrette with great intrigue as we readied to go
out for a walk.
"Ohhhh, barrettes are
really for girls. Your hair is too short anyhow," I
replied.
He squished up his nose,
twisted his head and pinched his very short hair as he exclaimed, "Ohhh,
then please get me a verrrry little one!"
I LOVE being a
grandmother!
