Greetings
to all of you! My name is Esther, and Jesus Christ is my Lord and
Savior. I have recently joined Charis and am pursuing my education
as my Charis coach invited me
to share a little about myself.
I am the third child in my family. I was born at home with the
assistance of a midwife. My older siblings were born in a hospital.
Before I was born, my mother decided that if she had any more
children she would have them at home. That led her to choose a
midwife. When I was growing up, I heard only good stories about our
midwife and I heard them often.
For all my education from birth through high school, I was
homeschooled. That means that I was taught at home by my parents and
by books. There are many advantages, in my opinion, to being
homeschooled, but I will mention only two here. One, no teachers
were teaching me anything contrary to the Word of God. Two, I
learned to study on my own -- to pursue knowledge without having it
spoon-fed to me by constant simplification and supervision. Both of
these I have found to my advantage in the years since I graduated.
I have been on a couple of mission trips in the United States with
my family. On one, we just traveled across country and back. On the
second, we spent almost a year in Alaska. Both were wonderful
experiences and we were blessed by many wonderful people.
Some of my interests include: writing, teaching, medical and natural
care, midwifery, missionary work, music, and the outdoors (forests,
fields, animals, plants, land).
I am currently working in central Virginia, as a veterinary
assistant at a small animal vet clinic and as a high school level
math tutor. I am grateful for this opportunity to have joined Charis
as a midwifery student,
and I hope to learn from all of you and to be a blessing to you for
years to come. Thank you!

Charis Cuisine
Living Garden Loaf
(tastes like Thanksgiving stuffing)
Ingredients
1 pound raw nuts &/or seeds. (almonds, sunflower seeds, walnuts,
pecans, etc)
¾ pound diced carrots
1 large diced onion
2 stalks of celery
1/8 C nutritional yeast
1 T cold pressed extra virgin olive oil
1 t raw honey or raw agave nectar
2 T poultry seasoning (I currently have the Simply Organic brand)
salt and freshly ground pepper to taste
your favorite herb for garnish
Directions
Grind nuts in food processor. Set aside in a medium bowl.
Process the rest of the ingredients to a pulp in food processor.
Combine the pulp and nuts in bowl and mix well.
Form into a loaf or burgers. Burgers can be topped with red bell
pepper strips and sliced tomatoes and wrapped in a lettuce leaf. If
your carrots are super juicy, you may want to add some dehydrated
garlic or dehydrated onions to absorb some of the liquid.
