WILD RICE PILAF WITH APPLES AND PECANS

Makes 8 to 10 servings

Wild rice, apples, and pecans just seem to belong together. The texture will invigorate your palate.

3 3/4 cups water
2/3 cup wild rice, rinsed
2/3 cup long-grain brown rice, rinsed
1 teaspoon seasoned salt
2 tablespoons butter or olive oil
1 cup chopped red onion
1/2 cup finely diced celery
2 medium tart apples, such as Granny Smith,
peeled, cored, and diced
1/3 cup orange juice (from 1 large orange)
2 scallions, green parts only, thinly sliced
1/4 cup currants
dash each: cinnamon, nutmeg
freshly ground pepper to taste
2 tablespoons minced fresh parsley
˝ cup chopped pecans

Bring the water to a boil in a heavy saucepan. Stir in the wild and brown rice and the seasoned salt, return to a boil, then lower the heat and simmer, covered, until the water is absorbed, about 40 minutes.

Heat the butter or olive oil in a very large skillet. Add the onion and celery and sauté, until the onion is golden. Add the apple and sauté· another 5 minutes. Stir in the cooked rice mixture along with the juice, scallions, currants, and spices. Season to taste with pepper.

Sautee over low heat, stirring frequently, another 5 minutes. This may be done somewhat ahead of time to this point, then left covered off the heat until needed. Just before serving, heat through, adding a bit more liquid if the mixture needs it, then stir in the parsley and pecans. Mound in the center of a large serving platter and surround with the stuffed peppers, above.

Heather, Suzanne, Jason & Kyler Jones
Homecoming

Here are some things Jason and Suzanne have said that were just silly or sweet.

Four year old, Kyler, asked his mommy if 'High-lights' were on his head. She couldn't figure out what he was talking about, but he was freaking out! He said 'Arthur said that highlights were on his head'. She realized he was talking about the Arthur show that was on right before we left, and he meant 'HEAD-LICE'. :)

Kyler and Suzanne's Daddy, Jason, was telling two year old  Suzanne, that she was a little princess. She corrected him by saying, "I'm a Queen. Mommy's a Princess."

Kyler says that when he grows up to be eight years old, he's going to have spicy food just like Daddy. He tells me that it hurts little boys on the mouth.

Jason is in the Navy and gone a lot. When they pulled up to the house in the van after picking Jason up, Suzanne says, "It's Mommy's house! Not Daddy's house. Mommy's house!'



A Bit Of Humor

HILLBILLY BIRTH


Deep in the back woods of Floyd County, Virginia a hillbilly's wife went into labor in the middle of the night, and the midwife was called out to assist in the delivery. Since there was no electricity, the midwife handed the father-to-be a lantern and said, "Here. You hold this high so I can see what I am doing."

Soon, a baby boy was brought into the world. "Whoa there", said the midwife, "Don't be in such a rush to put that lantern down I think there's another one coming."

Sure enough, within minutes she had delivered a baby girl. "Hold that lantern up, don't set it down there's another one!" said the midwife.

Within a few minutes she had delivered a third baby. "No, don't be in a hurry to put down that lantern, it seems there's yet another one coming!" cried the midwife.

The hillbilly scratched his head in bewilderment, and asked the midwife,

"You reckon it might be the light that's attracting them?"
