Hello Charis ladies!  I'm Mary Beth Stubenrauch and my husband, myself and our five children are missionaries living in Thailand. Over the past year God has done amazing things in our family.  After my first three children were born in Thailand the Lord brought a teeny, tiny, preemie baby boy to us.  He was born 14 hours away from our home and was in the NICU of a government hospital for 25 days after he was born.  In his first year of life we tried desperately to "hurry up" and adopt him.  In Thailand the word "hurry" is not something that anyone cares about.  In the end it took us almost until his 4th birthday to get things finalized on the Thai side.  We were in Thailand without a furlough for almost 5 years.  My older two children had almost no memories of America and only knew their extended family through Skype and a couple of visits to Thailand from their Grandparents.

During this time we felt sure that God was calling us to move to a new field in Thailand.  Before we ever arrived on the other end of Thailand (literally a 20 hour drive from our home in the south) my heart was stirred to receive training in Childbirth Education or perhaps even Doula training.  I hoped and still hope that one day I will be able to teach Thai women about the amazing way their bodies were created to birth babies.  Thai women know very little about pregnancy and birth.  In a country where prostitution is rampant, pornography hangs openly in every barber shop, many bathrooms, restaurants and even at the post office, and the morning-after pill is easily accessible at many pharmacies, its still too embarrassing for Thai women to talk about pregnancy and birth.  In a society very much divided by age, younger people are told what they 'need to know' by older people or educated people.  I pray that some day soon the glory of God will be revealed to these precious ladies through the understanding of the miracle that happens in their bodies as women created to give life.

Last year we were able to finally go on furlough and I also found out that I was expecting a new baby just weeks after arriving in the States!  We had a wonderful time and I was able to finally meet Kristin in person and attend one of the Charis workshops.  During my pregnancy and birth, my children, especially my daughters (ages 10 and 8), have learned so much about how their own bodies were created and the fun, discomfort, excitement, hormones, patience and sacrifice it takes to be a mother.  Baby Creed Judah was born on Thai New Year, April 13th in Chiang Mai, Thailand.  He has been the most wonderful gift to our whole family!

Banana Nut Butter Nibbles

Are your bananas browning before you have a chance to eat them? Here's a delicious way to use up ripe bananas so they don't go to waste.  These frozen niblets make a much healthier alternative to ice cream, and because they're bite-sized, you can nibble on a little something sweet whenever your sweet-tooth cravings strike.

This decadent-tasting treat is just over 160 calories per serving and offers 4.1 grams of fiber and 3.7 grams of protein, so you can feel good reaching for an extra nibbler or two.  For an added bonus, they are a cinch to whip up, and since you can store them in the freezer, you'll have a go-to healthy dessert whenever your sweet cravings kick into high gear.

Ingredients

5 medium ripe bananas
1 tbsp. all natural creamy peanut butter

Directions

Peel one banana and mash it with the peanut butter.  Set aside.

Peel the other four bananas.  Slice into half-inch thick slices.  Smear the banana peanut butter mixture on half the banana slices and top with the other halves, making banana sandwiches.  Place on a wooden cutting board or a plate and freeze for at least two hours.

Makes four servings (about seven pieces).
